cooling system upgrades

i have noticed since i started doing some performance mods to my truck (99 360 D) that when she warms up, there is a definate loss of power. i have done the rad flush with water wetter and 180 deg stat, and have had some improvement. the temps never reach midway even in stop and go traffic. however on those stop and go traffic jams here in nyc, i definately feel a huge loss in power. with my mods i was able to go light to light with my brothers armada, but now when the truck warms up, i get left in the dust consistantly.

what cooling system upgrades can i do, can i just bolt up the v10 fan? will that help? how about a high flow water pump(the original is on the truck with 70k). what about the electric fan conversion, can i just allow the fan to start at lower temps? has anyone done a 160' stat or removed it all together in the summer and replaced it for the cold seasons?
