The fsm calls for a 195 degree thermostat to make sure the engine is hot enough to burn cleanly for smog purposes. A 185 degree thermostat will not hurt your engine and allows it to run a little cooler, I have run one for 4 years in my D with no problems. You don't want to go much cooler as the pcm will throw a code if your engine doesn't warm up to a certain point. It thinks the engine is too cold for too long and codes.
Running a cooler engine makes it run a little richer. Theoretically the computer thinks the engine is cold and runs a little richer to help warm it up. More fuel means more power. It will still pass smog inspection with a 185 degree thermostat.
