a 160 Stat will be too low for use here in The NE I would relocate your IAT Sensor as someone mentioned on Dodgetalk and maybe consider adding a Electric fan set up that kicks in at about 195-200degrees
Put in the 180 stat also if not done already.
What intake do you have? while sitting in traffic your engine may be warming up engine compartment and you may be drawing in all that hot air.
