Temp gauge question

I recently replaced my serpentine belt and when I did I noticed the temp guage allways stays really cool. on hot day it would get to 220 if sitting in traffic but just normal driving at night and cool days it rarely gets into the normal range.
fluid is fine. any ideas why it is running so cool?
i did put the cooler thermostat in but thats been along time ago.
