4.7 Engine Knock

Engine overheated due to a bad headgasket about 3K miles ago. Headgaskets were replaced and everything has been fine since until today. As I was getting on the highway and accelerating on the on ramp, the engine knocked a little and felt sluggish. It knocked a few times when under heavier than average acceleration later in the drive. After parking it and then driving it home (same trip, opposite direction) no knock... I tried to make it do it but it wouldn't. Does anybody have any suggestions. The D is bone stock. I have 3/4 of a tank of gas, so I don't think that I picked up any junk from within the fuel tank. I haven't made the move to the 3923 spark plugs yet, but I'm thinking I should. i was sitting in some traffic prior to getting on the on ramp, would a 180 degree T-Stat help also?
