I had a temp rise on my 4.7, creeping up to 220 degrees, while at the Cascade Rendezvous and immediately shut it down. Found I had plenty of coolant and when I restarted found that the lower auxiliary (electric) fan was not kicking on. However, Temp never got above 220 or so and cooled down as I went down the mountain with AC shut off. Found out it was a bad fuse, simple fix and have not had temp above the midline (210) even on the hottest days...(104 degrees).Make sure that aux. fan is functioning.
You probably lost coolant from boil over after you exceeded 230-260 degrees. That kind of heat will also warp the head gasket and possibly the heads as well. I would carefully look at all your hoses (water and heater) as the pressure will weaken the hoses considerably.
Good luck and let us know what your dealer found and repaired.
