True B-Man. Stats do have a range of exceptable wroking temp varience. BUT you do not have a stock factory OEM 190. NOBODY makes one even in the aftermarket. They are either 192 or 195. And most mopar stats and the 4.7 for sure are 195. So if your stat is working at 185 then yours is BAD and opening early or partly stuck open. A GOOD working 195 will only work 190-200 range at worst by your own scale. And most are very much closer to the true 195 it should be then you beleive. So if this guy wants to put in a 180 let him. He will be getting in theory all things being equal a much cooler running temp then 195 even if it is at 185. Since stock is and has been 195. I think he will get more like 178-182 at worst if he goes with a good 180 stat from ROBERT-SHAW or the like. If you have any more data that is more in tune please present it. NOTE TOO that all these temps are stat OPENING temps. And in no way the system operating temp of the cooling system in general, nor as measured by a screw in thermal probe calibrated digital or other wise.
