Exhaust Questions

Why do most exhaust systems have so many unnecesary bends in them? If I had a custom exhaust done by a muffler shop, would having less bends almost a straight pipe (Except for necesary bends) increase the performance as well as the loudness of the exhaust tone it self? Will it make it more throaty? I am looking for the loudest, throatiest exhaust system that you can hear 3 blocks away. Any muffler sugestions?
How much hp & torque does a cat-back & cat-foward system usually produce? I am thinking JBA Cat 4ward Shorty headers and a Y-Pipe. Then a dual exhaust system (No real muffler commitments yet. Still looking)
